Anyone that knows me knows that I cannot leave the house without snacks. You’ll never catch me without something to hold me over in my bag or clutch, no matter how small! My favorite snack brand lately is Kate’s Real Food Bars which I discovered on my trip to Indiana earlier this year to go offroading at the Badlands Off-Road Park. Another healthy food option I was pleased to find on Backcountry.com is Vega protein powders. They are plant-based, gluten-free, and come in a variety of flavors. I made a protein fruit smoothie every morning. They are packed with flavor and nutrition. The recipes I am sharing in today’s blog post have been perfected over the years and I am delighted to share them.

Laura’s Chocolate Coconut Protein Shake Recipe:
  • a handful of ice
  • 1 scoop of Vega chocolate protein powder
  • 1 cup of milk (your choice)
  • 1 tablespoon coconut oil
  • half banana (frozen or room temperature)
  • a handful of berries (blueberries, strawberries, raspberries, blackberries)
  • 1 date (optional- adds sweetness)
  • a handful of spinach

Blend all together and garnish with coconut and/or cacao nibs!

  • a handful of ice

  • 1 cup of milk (your choice)
